OUR MENU
Great barbecue takes a while. That’s just how it is. Some of our offerings take only a couple of hours while others can take up to fifteen plus hours to prepare. We strive to cook all of our food right before your event so that it’s fresh and hot out of the smoker.
We use special hot boxes to transport our food so that our product stays nice and warm upon delivery. If you order ribs, we will typically slice them up right at your event for all your guests to see!
We can cater different sized events, from a minimum of 20 people and up to 250. You will notice that we do not include prices on the following list. That’s because the cost will vary depending on what meats and side dishes you order. Give us a call and one of our pit masters will gladly help you figure out a menu and discuss pricing.

St. Louis Pork Ribs
Each hand selected rack is the chosen from the highest quality pork. We use our very own custom rub and homemade BBQ sauce. After 3 to 4 hours in the pit, our pork ribs are tender, juicy, and flavorful. Q Co's best seller!
Smoked BBQ Chicken
Our chicken is brined for a minimum of 24 hours to achieve maximum flavor and moisture. After dusting the chicken with a custom rub, it is smoked in the pits until perfectly cooked. We finish by tossing in our BBQ Sauce (leg drums and thighs are most commonly used but breasts and wings can be done upon special request).
BBQ Pulled Pork
The shoulders we use to produce our pulled pork are hand picked just like our ribs. Each "butt" is coated in our rub and smoked low and slow until complete. We then hand pull and incorporate two different signature sauces to give the meat a nice depth of flavor. Have it plain, on a sandwich, or paired with our popular Macaroni and Cheese.
Pulled Chicken
Whole Chickens are brined, rubbed, and smoked just like our Legs and Thighs. They are then hand pulled and offered two ways: Sweet & Tangy or Buffalo Style. Sweet & Tangy utilizes the fruity/vinegar based sauce component found in our Pulled Pork. The Buffalo contains Smoked Poblanos with a spicy, but not too spicy, buffalo ranch sauce.
Beef Ribs
These monster size Beef Ribs are truly amazing. Yes, most of our "Q' is Southern Style but we treat these a bit different. A simple Salt and Pepper (Texas Style) rub is applied and these go on the smoker until they are juicy and tender. A Q Co. Team Favorite!
Beef Brisket
We utilize Prime or Angus full packer Briskets. Trimmed and rubbed, they receive similar treatment as our Beef Ribs - low and slow. A classic in the BBQ world.
Sides
Baked Beans
We start by rendering down thick cut bacon as a flavor base. Molasses, brown sugar, and ketchup make this a rich, smokey but yet sweet side to go with your "Q"
Corn Bread
Aka "Joe's Cornbread", our secret recipe mini muffins are a crowd pleaser. Moist and flavorful, you'll see actual corn kernels within. Can be made plain or jalapeño style.
Coleslaw
Our slaw is made from scratch using only the freshest ingredients. A "must have" topping for Pulled Pork Sandwiches or great on its own as a BBQ staple.
Corn on the Cob
We seek out the freshest, sweetest, locally grown corn in the area. We recommend ordering during the height of the season which is mid to late Summer.
Deconstructed
Mexican Street
Corn
We take the traditional method of making Mexican Street Corn but take it off the cob. The corn is grilled then paired with the usual cirtrus, spices, and Cotija Cheese
Jalapeño
Poppers
Known playfully as "ABT's" in the BBQ world (we'll leave it to the uninitiated to look up what it stands for). These peppers are stuffed with a mixture of cream cheese, shredded cheddar, and pulled pork. They are then wrapped in bacon and smoked. Need we say more?
Mac & Cheese
Easily our most popular side and crowd favorite. We use a "less is more" approach simply using milk, butter, flour, and 2 cheese blend to create this classic.
Roasted
Potatoes
Red Potatoes are chopped and oven roasted with olive oil, garlic, herbs, and seasoning. They come out with the perfect balance of crunchy on the outside and soft on the inside.
Other
Looking for something outside the box? Just ask! We can pretty much smoke anything. Prime Rib, Leg of Lamb, Beef Tenderloin, Pork Loin, etc. We've even tried Shrimp and Crabs, and the list goes on.
